Does the thought of baking a chocolate pudding conjure up images of effort, time and mess... but you still want to treat yourself? Then our no-bake option is ready in minutes and perfect to snuggle up to in front of the TV as the nights draw in.

I have a question. Do we have to use Sunflower oil or can we opt with other type of oil? Olive oil, perhaps? Please advise. Thanks!

Reduce the cook time (or power) in the microwave and and a little bit more milk. It will be trial and error to get the right combination. Watch the cake cook as soon as it stops rising it should be done in a few second give it about 10-30 seconds more (again more trial and error). The added milk is to moisten the cake, add some more milk in (maybe half a tbsp more). Don't add too much otherwise it will be soggy!

  • 2 tbsp self raising flour
  • 2 tbsp caster sugar
  • 1 tbsp cocoa
  • 1 tsp instant coffee powder
  • 1 small egg
  • 1 tbsp milk
  • 1 tbsp sunflower oil
  • 3 choc buttons

Grab a large mug. Spoon the dry ingredients into the mug and mix well.

Place into a microwave and cook for 2 ½ mins on full power.

Leave to rest for 1 minute then eat with lashings of cream or ice cream. Makes 1 large pudding... a generous dessert or ample to share
