Chilli Tuna Linguine

On those desperate nights when you've not had chance to shop and need a quick meal for one then this tasty and healthy meal is a life-saver. It uses nothing but cheap store cupboard ingredients that can always be on hand.

make yourself some infused oil by peeling and crushing three cloves of garlic and stuffing them into the neck of a small bottle of olive oil. Add a few peppercorns, a sliced up chilli and sprig of fresh rosemary. Leave in the cupboard until needed.
cook the pasta in plenty of boiling salted water for about 7-8 minutes until just cooked.
open the tin of tuna, drain and flake the fish into pieces.
cut the anchovy fillets into small bits.
drain the linguine when cooked and return to the hot dry pan with a good glug of the infused oil, the flaked fish, chopped anchovies, capers, chilli and lemon juice.
season well, toss thoroughly and serve piled high with a cold glass of white wine.

serves 1

  • infused olive oil (garlic and rosemary – homemade)
  • handful of linguine (100g)
  • tin of tuna (180g)
  • couple of jarred anchovies in oil
  • few capers, drained
  • sprinkle of chilli flakes
  • squeeze of lemon juice
