Curried Parsnip Soup

The first recipe from SORTED's Good Food Show live demo is an absolute hug in a mug. Some seasonal flavours transformed into a creamy and velvety soup. Made blissfully simple with a food processor to grate the onion and parsnips means that it cooks much quicker than a normal soup and you certainly aren't over worked!

  • 1 small onion
  • 1 clove of garlic
  • 2 parsnips
  • 500ml milk
  • 500ml veg stock
  • 1 tbsp of curry powder
  • sprig of fresh coriander, chopped
  • fresh crusty bread


peel and chunk up the onion and garlic into quarters.
use a food processor to grate the onion and garlic into a bowl.
fry in a deep saucepan with a shot of oil and a pinch of salt and pepper for 2-3 minutes.
peel the parsnips and cut off the top and tail of each.
grate the parsnips in the machine, or by hand.
add the parsnips to the softened onions with the curry powder, milk and stock.
heat to a simmer and bubble for 10 minutes.
blend the soup with a stick blender and stir through some chopped fresh coriander.
serve the soup in a bowl with some fresh crusty bread.
