Summer Porridge

Bored of the same old breakfast? Want a healthy, filling and tasty start to the day? Then look no further! This refreshing morning treat slowly releases energy throughout the day so that you stay fuller for longer. It can be stored in the fridge for a few days too so you can grab and go in the morning.

Ingredients

  • 2 red apples
  • a squeeze of lemon juice
  • handful of porridge oats (30g)
  • 1 tbsp of desiccated coconut
  • generous dollop of natural yoghurt (150ml)
  • drizzle of condensed milk
  • handful of fresh berries
  • handful of chopped hazelnuts or other nuts of choice (20g)

Recipe

chop the hazelnuts.
grate the apples into a bowl leaving the skin on.
mix with the lemon juice.
add all the other ingredients except for the berries and nuts, then taste. You may wish to add more condensed milk if not sweet enough.
serve it an hour after making to let the oats soak with plenty of fresh berries and the nuts sprinkled on top.
