This creamy and light strawberry mousse is simple and one of our favourite fruit puddings. A hassle free dessert that you can make the day before and bung in the fridge until needed... better still, it's fluffy mousse that doesn't use gelatin.
reserve a couple of the best strawberries to garnish at the end, then hull and halve the rest.
blitz 150g of strawberries in a blender with the juice of the lemon and sugar.
whip the cream to soft peaks in one bowl and do the same with the egg whites in another clean bowl.
fold the strawberry purée into the cream until it is no longer marbled.
spoon half of the egg whites into the strawberry cream and fold together, maintaining as much air as possible.
add the rest of the egg whites into the mix and fold again before dividing between your serving glasses.
cover the glasses with Clingfilm and chill in a fridge for at least 2 hours before serving.
chop the chocolate and hazelnuts together then scatter over the mousse before garnishing with some of the saved fresh strawberries and a sprig of mint.
