Scones are so easy to make and this savoury version with apricot and brie is a great alternative to a sandwich. Just fill the warm scones with butter and ham and enjoy with your friends and family. Perfect for picnics or to take to work for your lunch.
preheat the oven to 200°C.
sieve the flour, baking powder and salt in a bowl.
rub the butter into the flour with your fingertips until it looks like breadcrumbs.
dice the brie and the apricots into small pieces and add to the mix.
pour the milk in slowly as you mix until it forms a dough.
knead lightly for 30 seconds and then roll out to a thickness of 3cm.
cut out circles 5cm across and arrange on a greaseproof lined baking tray.
brush scones with egg and bake in the oven for 14 minutes until golden brown and cooked in the centre.
leave to cool a little and serve warm, spread with butter and stuffed with sliced ham.
