start with the salsa ingredients and bung all the bits into a small food blender.
blitz until the ingredients are small, but not puréed.
adjust the levels of salt, sugar and chilli to personal taste. It’s not an exact science but more like trial and error.
spoon the salsa into a bowl and repeat the same process for the guacamole ingredients.
spoon this into another bowl and adjust the levels of salt and lime juice to balance and create a zingy but fresh dip.
serve both with a little grated cheese and plenty of corn chips to dip.

• Salsa
• 1 large fresh tomato, deseeded
• ¼ of a red pepper, roughly chopped
• few slices of red onion, roughly chopped
• half a red chilli, sliced
• few sprigs of fresh coriander
• pinch of salt
• pinch of sugar
• glug of oil

• 1 ripe avocado, de-stoned
• 1 clove of garlic, peeled
• half a lime, squeezed
• few sprigs of fresh coriander
