preheat the grill.
remove any stickers from the apples and slice the top and bottom off to give a flat surface.
cut into apple rounds, with skin on, about 2 cm thick and cut out the core.
drizzle the honey over the apple rounds in a bowl, season with salt, pepper and the fresh thyme leaves then rub into all edges.
cut any rind off of the gammon and portion into serving sized slices.
put the apple rounds and gammon on the hot grill and close shut. You can do it under a regular grill without any problems.
peel and grate the carrot, celeriac and red onion into a clean bowl.
stir the crème fraiche and fresh herbs through the grated veg and squeeze in the juice of the lemon.
serve the celeriac slaw, with the gammon and apple rounds. Garnish with a dill frond and tuck in.

• 2 red eating apples
• 1 tbsp honey
• sprig of fresh thyme
• ½ a celeriac
• 1 carrot
• ½ a red onion
• sprig of fresh parsley, chopped
• sprig of fresh dill, chopped
• dollop of light crème fraiche

Grilled Gammon and Apple
