Apple & Blackberry Scones

You really can't beat homemade scones! These are so much better than the ones in the shops and they are dead easy to make. Apple and blackberry is a winning combination too... it'll be a struggle to even let them cool down without tucking in.

Ingredients

  • butter (50g)
  • plain flour (250g)
  • 3 tsp of baking powder
  • ½ tsp of salt
  • castor sugar (30g)
  • sultanas (50g)
  • milk (150ml)
  • 1 egg
  • 2 eating apples

to serve

  • clotted cream
  • blackberry jam to serve

Recipe

soak the sultanas in the milk.
preheat the oven to 200°C.
peel, core and cut the apples into small dice.
sieve the flour, baking powder and salt into a big bowl.
rub the butter into the flour to resemble breadcrumbs.
stir in the sugar, chopped apples and scoop out the sultanas adding those as well.
make a well in the centre of the mix and pour in the milk, mixing until you have soft dough.
bring it all together until smooth and roll out on a floured surface to 3cm thick.
cut scones out with a cutter (about 5cm across) and lay on floured baking tray.
brush with beaten egg and bake for 16-18 minutes until they sound hollow when tapped on the bottom.
cool on a wire rack and serve with cream and jam.
