Posh Beans on Toast

These aren't your average beans on toast. While opening a tin of baked beans is the easiest lunch ever, when you have a bit of left over tomato sauce we think it's worth putting in a little extra effort to make your own extra special baked beans on toast complete with juicy sausages.

Tomato Sauce Recipe

Seafood Spaghetti Marinara

Ingredients

  • a glug of oil
  • a pack of sausages (4 sausages)
  • 1 tin of cannellini beans, drained (400g)
  • 1 x leftover tomato sauce
  • 1 tsp of mixed herbs
  • splash of Worcestershire sauce
  • 4 slices of thick brown granary bread
  • a few handfuls of spinach
  • a few shavings of Parmesan

Recipe

heat the oil in a frying pan and add the sausages to fry until brown all over.
chuck in the beans, mixed herbs, tomato sauce and Worcestershire sauce.
simmer the mixture for 10 minutes, until the sauce has reduced and the sausages are fully cooked.
toast the bread in a toast or under the grill.
stir the spinach into the beans just before serving and allow it to wilt slightly.
split the sausage and beans between the toast and scatter over the Parmesan cheese.
