Homemade Pizza

Nothing beats a takeaway pizza on a night in with your mates... oh yeah... one thing does! Making them yourself. Personalise the toppings to suit you and then there's no more moaning about how stingy the toppings are! Just pile them on! Save some dosh and have a laugh with it. We did!

mix the yeast with a little of the water to form a smooth paste.
sieve the flour into a bowl and add the salt and oil.
pour in the yeast mixture and then the water a little at a time, mixing throughout until you have a soft dough.
knead for 5 minutes then cover and leave in a warm place for 45 minutes or so.
peel and finely chop the onion and garlic.
fry it in a pan with a splash of olive oil for 5 minutes until soft and starting to colour.
splash in the wine and reduce by at least half then add the tomato passata, basil, salt and pepper.
simmer for 20-30 minutes until the sauce has a spreadable consistency.
allow the sauce to cool.
preheat the oven as high as it will go.
take half of the dough mix and roll out to the thickness of a pound coin.
spread over the tomato sauce, right to the edges and scatter with cheese.
arrange the topping of choice over the cheese and cook on a baking tray for about 10 minutes. The edges should be crispy and the cheesy topping melted and golden.

Serves 3-4

  • yeast ½ tsp (dried)
  • strong white flour (300g)
  • 1 tbsp olive oil
  • 1 tsp salt
  • warm water (170ml)

  • 1 onion
  • 3 cloves of garlic
  • small glass of white wine
  • carton of tomato passata (500ml)
  • handful of fresh basil
  • salt and pepper

  • grated cheese of choice
  • topping of choice
