Would you like to enjoy 3 days worth of main meals for 2 people without forking out for alot of fish and spending loads of time in the kitchen? We have created 3 very tasty, very different recipes using a side of salmon. It has be recommended by both the NHS and Bupa that we should consume at least 3 portions of fish a week...which makes these recipes perfect to have in one week.

The thought of having salmon 3 days in a row might put you off but all the recipes are so different, you will forgot they are all using the same ingredient. Plus you could always choose to freeze the salmon once poached and use whenever you want it in the week.

Meat and Fish
1 side of salmon

Fruit and Veg
a small packet of parsley
a small packet of mint
a small packet of coriander
a large bag of watercress (150g)
small pack of tenderstem broccoli
1 large courgette
a small bag of baby new potatoes
2 medium baking potatoes
2 shallots
1 white onion
1 bulb of garlic
3 lemon

Dairy
small pot of double cream
small pot of creme fraiche
2 eggs

Dry Ingredients
small bottle of white wine vinegar
a small jar of capers
a small pot of mustard seeds
a small pot of turmeric
a small pot of curry powder
a few peppercorns
a small bag of linguine pasta

Check you also have...
1 veg stock cube
a knob of butter
2 glugs of olive oil

How to use pack

Day 1
A side of salmon takes hardly any time to cook and is so easy to do. Once the salmon has been poached in the liquid (as described in the first recipe of the pack), let it cool a little and use to serve with the amazing watercress sauce. What's left over can be stored in a sealed container in the fridge for up to 3 days and used within the other recipes in the week. The dishes in this pack are delicious, cheap and really healthy.

Day 2
Today's recipe has influences from the other side of the world. The combination of subtle, but easily achievable spices, uses up some of yesterday's poached salmon and makes this single pan Salmon Hash recipe a doddle make.

Day 3 The third recipe in the pack brings a taste of Italy. When dinner can be ready in under 15 minutes then there should be no complaining. This fresh, tasty, flavoursome pasta dish makes use of the last few bits of poached salmon in a great Linguine recipe.

And remember... If you are not having the salmon 3 days in a row make sure you freeze the cooked salmon and defrost it in the fridge the day before you need it, so that the salmon is at its freshest.
