We all know that we should have 5 portions of fruit and vegetables a day but do we actually consume 5? Our body needs vitamins and minerals as part of a healthy balanced diet.
Below are 3 awesome recipes that are packed full of vegetables that are perfect for all of you vegetable haters and fussy eaters out there, as you won't even know you are eating them.
meat and fish
2 fillets of river cobbler, bones and skin removed
a pack of chunky sausages
fruit and vegetables
3-4 baking potatoes
2 red pepper
1 yellow pepper
1 punnet of mushrooms
1 red onion
2 white onions
1 bulb of garlic
1 aubergine
1 courgette
a small bag of spinach
1 small packet of basil
1 small packet of parsley
dairy and chilled
2 eggs
a block of cheddar cheese
a small pot of creme fraiche
frozen
a small bag of frozen peas
dry ingredients
mixed herbs
2 slices of bread
a tin of chopped tomatoes (400g)
small jar of honey
a tin of sweetcorn (325g)
a small bag of penne pasta
a small bag of farfalle pasta
check you also have
3 glugs of olive oil
a handful of plain flour
a knob of butter
a splash of milk
This pack contains three veg filled recipes that stand alone. The recipes are developed so that you will eat vegetables without even realising. So when cooking for people who do not like vegetables or need more in their diet, then try cooking these recipes.
Day 1
Our Sausage and mushroom pasta plays tribute to our fictional friend Popeye. Not only is handful of mushrooms included within the dish, but some fresh spinach add great colour at the end. By mixing it all up with a simple sauce and distracting the eater with familiar and favourite flavours like sausage and cheese, the veg sneaks under the radar.
Day 2 This recipe has been tried and tested with Barry's cousin Olly. The use of red pepper in our Fish Finger recipes adds bright colours and natural sweetness to the fish. Not only that but after our vibrant and fresh mushy peas you'll be hooked and never resort back to the tinned stuffed again.
Day 3 This one is a beauty. So much veg, often bits you have lying around in the fridge, are blizted up to a secretly healthy tomato sauce that's used in our Pasta Bake. Natural sweetness from roasted veg, honey and sweetcorn means just about any fussy eater will enjoy it.
