Struggling to get your five a day? Then why not use dessert as an excuse for another portion. This is a quick, simple suggestion that tastes as good as it sounds, all based around the humble pear.
preheat the oven to 210°C.
wash the pears, halve them lengthwise, remove the core and lay them cut side up in a baking tray.
smear them with half of the butter and the sprinkle of mixed spice.
bake for 5-6 minutes until beginning to soften.
warm the syrup through with the other half of the butter and stir in the cornflakes and nuts.
spoon the sticky mix on top of the half cooked pears and return to the oven for another 5 minutes until golden and crunchy on top.
serve with a big scoop of vanilla ice cream.
