Lemonade Calamari

Fried calamari crops up on loads of pub menus but did you know how easy and cheap it is to make at home? SORTED have given this restaurant classic a twist by using lemonade in the tempura batter.

Ingredients

  • self raising flour (100g)
  • fizzy lemonade, ice cold (200ml)
  • 1 large squid, cleaned
  • couple of tbsp of mayonnaise
  • 1 lemon, zested
  • handful of fresh rocket.

Recipe

preheat fryer to 180°C.
zest the lemon and stir into the mayonnaise with plenty of black pepper.
clean the squid under cold running water if it is not already done and slice into rings.
sieve the flour into a clean bowl and make a well in the centre.
pour the cold lemonade into the well, whilst whisking until it forms a smooth batter.
dip the squid into the batter to coat and fry in the fryer for 2 minutes until the batter is crispy and the squid is cooked.
drain the squid on a paper towel to remove excess oil and season with plenty of salt and pepper.
serve the squid rings on a sharing platter on a bed of rocket with the lemon mayo to dunk into.
