Grilled Ham and Pineapple Salsa

Do you like a Hawaiian pizza? We have taken the flavours of ham and pineapple and created a quick and simple mid week meal that is low carb and tastes amazing. Why spend ages in the kitchen when you can create a delicious dish that take less time that heating up a ready meal in the oven?

Ingredients

  • handful of fresh parsley
  • couple of cloves of garlic
  • glug of olive oil
  • 4 thick slices of cooked ham
  • 1 red chilli
  • ½ a cucumber
  • 1 tin of pineapple
  • 1 lime
  • few sprigs of coriander, chopped
  • mixed salad leaves to serve

Recipe

blitz or chop the parsley and garlic and mix with the olive oil to form a paste and put in a large bowl.
add the cooked steaks and coat in the marinade, then leave for an hour if you can.
deseed and dice the chilli and cucumber, putting them both in a clean bowl.
dice the pineapple to a similar size as a cucumber and add to the bowl.
squeeze half of the lime into the cucumber and pineapple.
chuck the coriander into the salsa bowl and mix.
cut the rest of the lime into wedges.
heat the griddle pan or BBQ so that it is really hot.
grill the ham on both sides to reheat so that it is piping hot.
serve the ham with a side of mixed leaves and plenty of the pineapple salsa.
