chop and prepare your chosen soft fruit, removing stalks, skin, stones and pips where required.
place into a pan with a splash of water for every cup of fruit.
heat up and bubble for 5-10 minutes until soft and jammy.
blend the fruit into a purée.
push through a sieve if you want to remove seeds.
spread onto a silicon paper lined baking tray.
dry out in the oven for 4-6 hours at 80°C until you can touch it without it feeling tacky.
allow to cool, then slice and peel away from the paper.
