Eggs are usually a pretty critical ingredient in a chocolate mousse, but our version omits them and uses Greek yoghurt rather than cream to keep the fat content down. But we promise this is still seriously rich and chocolatey and you'll only manage to get through a small portion.
boil a little water in a large pan.
place a bowl over the pan of simmering water, making sure it’s not touching the water.
break up the chocolate and melt it in the bowl with the honey.
stir in the almond butter, once the chocolate has melted, until the mixture is smooth and glossy.
whisk the milk and cocoa powder into the yoghurt until light and smooth.
fold milk mixture into the chocolate a bit at a time until it is fully combined.
pour the mixture into glass dishes and place them in the fridge to set.
chill for at least 2 hours or overnight.
serve the mousse with a selection of carefully prepared berries and a scattering of toasted almonds.
