Italian onion rings

These are our onion rings with a difference! The batter is mixed with the Italian flavours of basil, sun dried tomatoes and black olives. Not only is the flavour amazing, but the rings come out in 3 different colours... a talking point on any plate!

  • 1 large white onion
  • a dollop of sun blushed tomatoes paste
  • a dollop of basil pesto
  • a small handful of pitted black olives
  • plain flour (100g)
  • 2 eggs
  • milk (150ml)
  • oil for deep frying


slice the whole onions fairly thick, parallel to the root, so that you end up with rings.
pile the olives into a small blender or food processor, then blitz with a splash of water until smooth.
grab a bowl and mix the flour, eggs and milk to a smooth batter.
divide the mixture between three bowls.
turn each batter a different colour by folding in one either of the tomato, basil or olive pastes.
preheat a fryer to 180ÂșC, or heat oil in a deep saucepan. Never leave it unattended.
dip the onion rings into any of the batters, then carefully lower in to the fryer oil.
fry for 3-4 minutes, until they are crisp all over.
season well with salt and share with friends!
