Cauliflower Cheese

Cauliflower Cheese is the ultimate comfort food, and we're supercharging it into a full main meal!

Forget the school canteen memories, our fresh and tasty version adds sausage into the dish and is served with baked beans to become the ultimate midweek comfort dish.

Ingredients & RecipePrint


  • 1 head of cauliflower
  • 6 pork sausages
  • knob of butter (30g)
  • 3 tbsp plain flour
  • 1 pint of milk
  • handful of grated mature cheddar cheese
  • bunch of fresh parsley, chopped
  • tin of baked beans to serve


bring a big pan of salted water to the boil and preheat a grill to medium.
prick the sausages and lay on a tray, then cook under the grill for 6-8 minutes, turning often.
melt the butter in a pan and dump in the flour.
stir to a paste and cook for 1 minute over the heat as you keep stirring.
pour in the milk, a bit at a time, making sure the milk is fully absorbed and bubbling before splashing in the next amount.
lower the heat to a gentle simmer and cook the sauce for 2 minutes before seasoning.
chop the cauliflower into smaller florets.
lower them into the pan of water, bring back to the boil, and cook for 3-4 minutes until the cauliflower is just cooked.
drain the cauliflower and allow to steam dry for a minute or so.
add the grated cheese and chopped parsley into the white sauce and stir to melt.
slice the sausages into chunks 2cm across with a sharp knife.
arrange the cauliflower and sausage into a shallow oven dish and pour over the sauce.
place the dish back under the hot grill for a couple of minutes until glazed and bubbling.
serve with steaming baked beans on the side.
