Breakfast Muffins

This might just be the BEST breakfast ever!

We take the best bits of a Full English breakfast and blend them up into the most awesome burger you've ever tasted. We then top our sausage, mushroom and black pudding burger with the perfect fried egg, courtesy of Happy Eggs!

  • 2 field mushrooms
  • a few spring onions
  • black pudding (100g)
  • streaky bacon (100g)
  • pork sausage meat (300g)
  • a small bowl of plain flour
  • 2 glugs of oil
  • 4 (Happy) eggs
  • 2 plum tomatoes
  • 6 muffins, sliced in half


preheat the oven to 180°C.
dice the mushrooms and chop the spring onions, putting both into the bowl of a food processor.
cube the black pudding, chop the bacon and break up the sausage meat, then add to the same bowl and blend to a course paste.
mould into 6 burger shapes and coat each in a little plain flour.
fry in a hot pan on both sides until golden and then transfer to the oven to cook for about 6-8 minutes so that the burgers are cooked all the way through.
heat another pan after the burgers have been in the oven 10 minutes with oil and crack the eggs into the pan to fry for 2 minutes until the white is cooked but the yolk is still runny.
slice the tomatoes and halve the muffins.
put some tomato slices, a burger and a fried egg in each muffin and top with the lid.
serve with tomato sauce and a glass of orange juice for the perfect brunch.
