Baked Plum Pudding

These baked plums are a ridiculously easy one tray wonder. Mix the pastry dough, mix the plum filling, chuck everything onto a tray, stick it in the oven and you're Sorted ;)

  • self raising flour (220g)
  • 1/2 tsp of baking powder
  • shredded suet (100g)
  • golden syrup (50g)
  • milk (140ml)
  • 6 plums
  • brown sugar (50g) + a bit extra
  • 1 orange
  • 1 tsp of cinnamon
  • a shot of cointreau (optional)
  • a glug of double cream


preheat the oven to 200ÂșC.
mix the flour, baking powder, suet and golden syrup together in a bowl with a pinch of salt.
pour in enough milk as you mix until it forms a smooth dough.
halve and de-stone the plums then cut into chunks.
toss the plums in a bowl with the sugar, orange zest, cinnamon and cointreau.
chuck the plum mix into an ovenproof dish and top with rustic bits of the suet dough.
sprinkle over a bit more brown sugar.
place the dish in the oven for 30 minutes.
serve with a a jug of custard or double cream.
