chocolate ice pops

This recipe could not be easier.. throw it all in a pan, heat it to a boil and freeze. The chocolate orange lollies can be made beforehand so are always stashed away for that hot summer day... fantastic for the kids (and great for adults too!!!).

Ingredients

  • few squares of dark chocolate (25g)
  • 3 heaped tbsp of castor sugar
  • 1 tbsp corn flour
  • 1 ½ tbsp cocoa powder
  • 1 cup of milk (300ml)
  • small knob of butter
  • zest of an orange
  • handful of 100’s and 1000’s

Recipe

measure all of the ingredients except the 100s and 1000s into a small saucepan and whisk together.
gently heat up, stirring occasionally, until simmering.
simmer for 2 minutes until thickens.
divide into 6 ice lolly moulds (or use ice cube trays) and put into the freezer.
insert wooden lolly sticks into the centre of each lolly after an hour in the freezer, when they have begun to freeze, so that it stands up straight.
freeze for several hours.
lay the 100’s and 1000’s on another.
dunk the mould in warm water to ease out the lollies and while still slight wet around the edges roll them in either nuts or 100’s and 1000’s to stick.
return them to a tray in the freezer until you want to serve them.

makes 16 ice cube sized lollies
