Grilled: Monkeying Around With Jamie!

Jamie SPafford

On today’s menu…

Hey, I’m Jamie – you might have seen me monkeying around in SORTEDfood videos, annoying Ben and eating lots. When not doing that I am looking after my 16 month old daughter Evie with my wife Lucy, or talking to anyone and everyone about SORTEDfood!

My love of cooking all started when…

I’ve always enjoyed eating, but cooking is something that didn’t interest me until uni… when I had to start feeding myself! It’s no secret that I was absolutely rubbish, but teaming up with the guys and other friends at uni helped me be a bit more self-sufficient! When I realised how easy cooking certain dishes could be, and how I could experiment with different ingredients to change the flavours of my favourite foods, that’s when I really fell in love with cooking.

My cooking style is…

I have a few favourite dishes – curry, chilli con carne, easy pasta recipes… I’m an experimenter (that’s a real word, right?). Chuck in a bit of this, bit of that, don’t be too precise, see what’s lying around and could improve the dish. No two versions have ever been the same, but I’m sure they’re getting better!!

My desert island dish would be…

I think it would have to be a curry, with the works! A good Dansak or Jalfrezi, mushroom rice, Bombay potatoes, Sag Aloo, Pashwari Naan, poppadoms, mango chutney, raita etc etc…

My favourite food blog…

We’ve met so many people over the last few years that I have tonnes of favourite food blogs… But if I had to pick one it would be Thug Kitchen purely for the attitude!

My most embarrassing food moment was…

I can’t pick between these two… Either finding and then microwaving a frozen doner kebab in a supermarket aisle whilst at uni… Or back at school failing so hard trying to make profiteroles. I ended up with burnt, flat bits of something that might have been choux pastry… I even tried to ‘save’ it by crushing them over melted orange chocolate… I failed that class!!

My best ever food moment was…

Seriously?! You know what I do every day, right?! For me, the food is one element of making a ‘moment’, with the others being who you’re with and where you are. With that in mind, the meal at my wedding was one of the best I’ve ever had, as was the ‘best steak I’ve ever had’ in a small village in Spain on holiday. Our Lost and Hungry tour in the U.S. earlier this year stumped up a LOT of moments…

My top hack…

This’ll sound ridiculous, but my biggest tip would be – give it a go, what’s the worst that could happen?! You’re not likely to perfect a dish on the first go, but why let that stop you? Each time you try something you have the opportunity to learn from it, change it up, try it differently. Otherwise, why else are we here?!

My one and only gadget would have to be…

I bought a big chef’s knife a few years ago (*plug* obviously before SORTEDfood range came out *plug*), and I use it all the time. It’s my comfort blanket… If a comfort blanket can be 6 inches long and super sharp… Honestly though, a good knife can really make a big difference when learning to cook.

Would you rather…

Eat only your favourite food for the rest of your life OR never eat your favourite food again?

Could I eat a curry with the whole works all day every day? Probably not, so I’d had to say never eat my favourite food again.

Eat breakfast for every meal OR eat dinner for every meal?

I’m sorry, there’s food that you can’t eat for breakfast? Dinner for every meal!!

Only cook with an oven OR only cook on a stove?

Argh… I think oven. I think I could still do most of my favourite foods… Maybe… ARGH!

Eat cake covered in gravy OR eat stew covered in icing?

EASY! Stew covered in icing, the mixture of sweet and savoury with a little marzipan for good fun would be delicious!!
