The weather forecast for this weekend in the UK is sunshine. It’s the first hot weekend of the year so we are doing what Brits do best, getting far too over excited about not having to wear the winter coat for a day. Here are some brilliant popsicle recipes from around the web so you can peak just like us!
FIG AND RICOTTA CHEESECAKE POPSICLE
When picking your fruit for lollies, the best thing to look out for is the shape and colour. Figs work perfectly for these. They stand out amazingly against the ricotta and the seeds make the most incredible patterns!
WATERMELON, STRAWBERRY & MINT POPSICLES
Here’s a great example of using colour in your treats. The watermelon and the strawberries together make these guys the most incredible vibrant red! Paired with the green mint and they stand out from a mile away! (Just don’t wear white…)
CUCUMBER, GIN AND TONIC POPCISLES
Everybody loves a G&T in the sunshine. Now you can have them in lolly form because let’s be honest, having drinks as lollies just make the whole experience immediately more fun.
PEANUT BUTTER & BANANA POPSICLE
A great way to make your lolly more appealing is to give people clues as to what flavour they are. My Fussy Eater has coated her lollies in crushed peanuts. The crunch along with the smooth banana is such a treat.
ROASTED BERRY & HONEY YOGHURT POPSICLES
Whole berries look great in lollies but Cookie and Kate have taken it one step further. They’ve made the most of the vibrant juice and mixed it with yoghurt to make beautiful spirals of colour and flavour the run through the lollies.
We are going to end on a bit of a fancy note. Why not give your popsicles a bit of fizz with some Champagne! That along with the chunky pieces of fruit makes these lollies idea for your next garden party!
