After a hard day’s work, the last thing you want is a complicated and fiddly recipe. The holy grail for weeknight cooking is the ability to make delicious, fresh food in as little time as possible.

1. Fiery Prawn Noodle Soup
This is Barry’s recipe and it will ‘blow your pants off’. It’s basically a glorified pot noodle that uses the shells of prawns to quickly make a delicious and fragrant tasting stock. 2. Chorizo Nachos
These nachos are hearty, filling and a great idea if you’re looking for a mid-week treat that’s a little on the naughty side. The herbs and spices in the meaty tomato sauce take the nacho game to the next level. They really are gourmet and worth a punt. Give them a go here.
3. Thai Red Chicken Curry
If you can remember to soak the chicken in buttermilk the night before, you’ll have succulent chicken to feast upon when this dish is finished. 4. Sriracha Prawn and Avocado on Toast

5. Wasabi Tuna & Noodle Salad

6. Rainbow Salad
Salad seems a bit of a cop out on this list, doesn’t it! But trust us when we say that it’s big enough for a full on meal. 7. Salami and Spinach Orzo
