The Mean Green Smoothie

Here we have a homemade oat milk based green smoothie! This recipe will show you how to soak oats overnight then strain them into a gorgeous milk. Whack it together with a loada goodies like blanched kale and you've got a nutritious and delicious concoction to make your insides feel fresh.

The Mean Green Smoothie

Ingredients

90 g rolled oats toasted
500 ml water
1 pinch salt
1 pitted date
50 g kale
50 g watercress
8 ice cubes
2 tbsp almond butter smooth
1 tbsp honey
2 pitted dates
1 avocado
2 blocks frozen spinach
1 tsp matcha powder
2 limes

Method

Tip the oats into a large mixing bowl and pour over enough cold water to cover them generously. Leave to soak overnight then strain the liquid away. Tip the drained oats into a Blend-X Fresh blender and pour in the 500ml of fresh water. Add the salt and the date and blitz until as smooth as possible. Arrange some muslin cloth over a large mixing bowl (or a fine sieve) and pour the milk through the cloth into the bowl to get a smooth milk.
Bring a medium saucepan of water to a rapid boil and add the kale and watercress. Blanch for a minute before removing and cooling in ice water.
Add the ice to the washed out blender with 500ml of the oat milk, the almond butter, honey and 2 dates. Halve, destone and scoop out the flesh of the avocado. Add the cooled and drained kale and watercress to the blender along with the spinach, avocado and matcha powder. Zest in one of the limes and squeeze the juice of both into the blender. Blitz it until the mix is thick and smooth, adjusting with cold water if required to get the consistency you like.
Serve immediately whilst cold. Serves 4.
