Vietnamese Beef Pho

We have had loads of requests for beef pho so we have come up with an easy and delicious recipe that anyone can make at home. This Vietnamese noodle soup is packed full of flavour and takes less than 10 minutes to make... so quick, tasty and healthy... what's not to like?

Ingredients

  • 1 large onion
  • a knob of ginger, peeled
  • 1 stick of lemongrass
  • 1 red chilli
  • a glug of sesame oil
  • 2 star anise
  • 1 cinnamon stick
  • 2 beef steaks (150g each)
  • 2 mugs of beef stock
  • handful of beansprouts
  • 2 handfuls of easy cook rice noodles
  • handful of spring onions, chopped
  • few sprigs of mint, chopped
  • small bunch of basil, chopped
  • small bunch of coriander, chopped

Recipe

peel and slice the onions into rings.
grate the ginger and finely dice the lemongrass and chilli.
put the star anise, cinnamon, onions, ginger, lemongrass and chilli into a pan with a shot of oil and cook for a few minutes.
slice the beef into thin strips and add to the pan and stir to coat in the flavours.
splash in the beef stock and bring to a gentle simmer.
throw in the beansprouts and noodles and cook for a few minutes until the noodles are tender.
garnish with chopped spring onion and herbs.
