In the summer months we are all crying out for more ice cream... but let's be honest, it's not all that good for you. So this version is a much healthier way to enjoy a sundae... made using the cheat of frozen banana and served with a healthy granola crunch it's just perfect for adults and kids alike.
peel and slice the bananas and lay them flat on a baking tray.
freeze the bananas for several hours or overnight.
preheat an oven to 170ºC.
split and deseed half of the vanilla pod… saving the other half for another recipe.
mix the rolled oats, coconut flakes, pumpkin seeds, vanilla seeds and honey in a bowl.
place clusters of the oat mixture onto a lined baking tray and bake for 25 minutes, tossing them occasionally.
pour the crème fraîche, yoghurt, maple syrup and the frozen banana into a blender and blitz for 30 seconds.
transfer the banana ice cream into a container and return to the freezer.
remove the granola from the oven after 25 minutes and allow to cool a little.
serve the warm granola on top of the ice cream in a sundae glass!
