If you're after a centre-piece dessert. A bit of showmanship, a bit of flair and to get the wow reaction then this retro dessert with a cherry twist is spot on. Nothing more than an assembly really but definitely a talking point. An alternative to Xmas pudd.
cut a round of sponge out that is slightly larger than the diameter of the ice cream tub.
place it on a non-stick baking tray.
smother it in the pitted cherries.
turn out the entire tub of ice cream on top and return it to the freezer for now.
separate the eggs and whisk the whites until they are white and fluffy.
add in the sugar, half at a time, whisking continuously until stiff enough to hold upside down above your head.
grab the sponge and ice cream back and slop the meringue over it, sealing everything in.
glaze the meringue all over with a blow torch or place into a hot oven (at it’s absolute highest temperature) for 2-3 minutes.
serve immediately for the mystery of a warm meringue encasing the frozen ice cream, with a drizzle of cherry brandy.
