The apple sauce makes this cake really dense and moist, which is the perfect contrast to the crispy outsides once we toast it. Try it before you think we've gone mad, toasted cake is amazing...especially with our homemade butterscotch sauce and a dollop of ice cream! :)
preheat the oven to 180ºC.
toast the walnuts in d dry pan for a few minutes.
beat the eggs and the sugar in a bowl until pale and thickened, use a machine if you have one.
pour the oil and the maple syrup into the egg mixture and combine thoroughly.
add the flour, baking powder, cinnamon and ground cloves into the egg mixture and fold until smooth.
fold the apple sauce into the cake batter along with the walnuts.
line a loaf tin with baking parchment and pour in the cake batter.
bake the cake for 45-50 minutes, with a sheet of tin foil over the top for the last 20 minutes before removing and cooling on a rack.
chuck the butter into a saucepan and melt.
add the sugar, cream and vanilla extract and whisk until combined.
boil the mixture very gently for 5 minutes.
preheat a grill to high.
slice the apple cake and toast the slices under the grill for a few minutes each side to go golden.
serve the toasted cake slices with a scoop of ice cream, the butterscotch sauce and a few thin slices of fresh crisp apple.
