For those who can't eat tomatoes or prefer not to, but still love pizza... this is the perfect alternative! A béchamel sauce.
melt the butter in a small pan.
add the flour and stir over the heat to form a smooth paste.
cook for a minute, adding the bay leaves at this stage.
pour in the milk a little at a time, making sure that each time the mixture is smooth and has come back to the boil before adding the next stage of milk.
once the mixture has the consistency of thick custard simply allow it to bubble for another minute and season it with salt and pepper.
pick out the bay leaves and pour over the pizza base, spreading right to the edges. (Exactly the same way as you would with tomato).
